As a young cook in a local restaurant some years ago, I got the incredible opportunity of having an insider’s look at a small restaurant’s best kept secrets. As we were nearing the opening of our second store I took it upon myself to organize a formal copy of our recipe book. We were the self-acclaimed “Great American Grill” and, as such, grilled hundreds of pounds of steaks, and burgers, every week. Any restaurant owner will tell you that the key to a great steak (aside from cooking it absolutely no hotter than medium) is in the seasoning. This recipe is one that I have brought with me, from that restaurant so long ago, and I have used it in an incredible amount of dishes since. Its usefulness does not stop at steaks and burgers, however. Use it on boiled corn on the cob, grilled vegetables, steaks, burgers, chicken; you could even mix it with flour and use it to fry chicken; just about anything that needs salt. Simple, but effective. Call it the perfect seasoning.
If you really want to kick the flavor up a notch, try using a coffee grinder to grind up some black peppercorns.
The recipe is Simple:
“The last seasoned salt you will ever use.”
Seasoned Salt
- V
- VG
- GF
- DF
Ingredients
- 3 parts salt
- 2 parts restaurant style black pepper
- 1 part granulated garlic
Method
Add all ingredients to a bowl and stir with a spoon. Use to season pork, beef, poultry or vegetables.
